| | This past weekend, we fired up the grill. It's one of the things that says that spring is in full bloom and Memorial Day is near. On a personal level, it means that I am cooking and my wife gets a break (plus I get to play with fire).
What are the basic rules that I follow? There are a few basics.

First, I thoroughly clean the grill. To be honest, we clean our grill twice. Whenever I finish a grill session, I clean the grill. Before I start a grill session, I clean the grill.

Second, I preheat the grill. This allows for even heat when I start grilling meat of vegetables. On another practical level, pre-heating the grill will kill off any bacteria present. This is a practical measure.

Third, when it comes to cooking, preparation is the rule. I like to season the meat or vegetables in advance. Foil packets are my friends for vegetables; vegetables, seasoning, a little olive oil, and wrap (leave a small "chimney" in the foil for venting).
