I love hearing this food story. Tacos Al Pastor has a Mexican origin. But they were actually created by Lebanese immigrants who moved to Mexico in the early 1900s. "Al Pastor" finds its inspiration in shawarma. The meat is slow cooked spit-roasted meat (usually lamb) marinated in a blend of chilis and spices.

Made From RI has found someone right here in Rhode Island who has elevated Al Pastor style to gourmet status.

Here is all it takes: Just add pineapple juice and then marinade with pork shoulder/butt. Cook until fork tender.
