Celebrating National Lobster Day (September 25) at Made From RI

Lobsters are worthy of celebrating. I have a special connection because of that trawl of lobster traps that I would tend during my high school years off Hope Island here in Rhode Island's Narragansett Bay. 

The tasty crustacean is a story in itself. Today, lobster is a delicacy. It was not always so. At one time, Boston Baked Beans could be purchased for a mere 53 cents a pound; at the same time, canned lobster was 11 cents a pound. Lobsters were considered prison feed and were fed to pigs agriculturally.

But Lobster came became a culinary treat because of a Golden Spike. The United States railroads became transcontinental in 1869. The railways started serving lobster as an "exotic" delicacy to unknowing passengers. The word spread across the country about this wonder and the popularity of Lobster from the Northeast grew.
