Updated Cod & Narragansett Bay Seasoning Recipe From Made From RI

Cod is a New England favorite. A fish of lore and history. There are international treaties written about Cod. So it is only fitting to treat Cod well in an updated dish. Here is a suggestion for Microwave Cod using Narragansett Bay Seasoning at Made From RI.

  1. 1 small tomato, chopped
  2. 1/3 cup finely chopped onion
  3. 2 tablespoons water
  4. 2 tablespoons canola oil
  5. 4 to 5 teaspoons lemon juice
  6. 1 teaspoon dried parsley flakes
  7. 1/2 teaspoon dried basil
  8. 1 small garlic clove, minced
  9. 1/8 teaspoon salt
  10. 4 cod fillets (4 ounces each)
  11. 1 teaspoon Narragansett Bay Seasoning at Made From RI

In a small bowl, combine the first nine ingredients. Place cod in an 11"x7" baking dish. Top the fish with tomato mixture. Sprinkle with seafood seasoning. Microwave, covered, on high 5-6 minutes or until fish begins to flake with a fork.
